This summertime strawberry salad is the perfect go-to weekday salad to ensure that you are fuelling your body with healthy, wholesome, goodness. Feel free to swap out and substitute any of the ingredients in this recipe with whatever you have available in your fridge, or whatever you think will taste great.
When I’m making a salad I usually decide the ratio of ingredients as I go, so there are no metrics for the actual salad ingredients - add what feels right for you!
Summertime Strawberry Salad Ingredients
Salad Ingredients
◻️Greens (I used fresh rapini and lettuce from the garden), roughy chopped
◻️Grains (I used tricoloured quinoa)
◻️Veggie stock
◻️1 Tbs lemon zest
◻️3 shallots, sliced
◻️Blanched asparagus, chopped
◻️Green capsicum, quartered and thinly sliced
◻️Avocado, sliced
◻️Strawberries, sliced
◻️Red onion, sliced
◻️Toasted walnuts, chopped
◻️Vegan feta (@vegnature6sens is my favourite)
Lemon Vinaigrette
◻️1/4 cup olive oil
◻️1/4 cup lemon juice
◻️1 tsp lemon zest
◻️1 tsp dijon mustard
◻️2 tsp maple syrup
◻️1 garlic clove, minced
◻️Salt & pepper
Method
◻️1. To prepare the quinoa, heat olive oil in a saucepan over medium, add thinly sliced shallots and lemon zest. Cook for 2-3 minutes then add the quinoa. Toast quinoa for 1-2 minutes and then add stock (or water), cook according to package instructions.
◻️2. Add all other salad ingredients to a bowl.
◻️3. Mix dressing ingredients in a jar to combine.
◻️4. I like to have quinoa warm with salad, although you can also wait for the grains to cool before you mix them through.
