The Ultimate Healthy Granola

This is the ultimate go-to granola recipe that you can enjoy as a tasty meal or a scrumptious snack. My preferred way to enjoy this flavoursome, nutritious granola recipe is with a heaping of fresh fruit, whipped lemon coconut cream, and fresh mint from the garden. Although, you can also enjoy this granola with a home-made berry compote, as pictured below.


Vegan Granola Recipe with Berry Compote and Coconut Cream

The Ultimate Healthy Granola Ingredients


Granola

◻️1 cup rolled oats

◻️1 + 1/2 cup walnuts

◻️1 cup pecans

◻️1/2 cup pumpkin seeds

◻️3/4 cup coconut smiles

◻️2 tsp cinnamon

◻️1/3 cup maple syrup

◻️1/3 cup coconut oil, melted

◻️1 tsp vanilla

◻️1/4 tsp salt


Whipped Lemon Coconut Cream

◻️1 can full fat coconut cream, refrigerated, (solid portion only)

◻️1-2 Tbs lemon juice

◻️1Tbs lemon zest

◻️1-2 Tbs maple syrup

Berry Compote

◻️3-4 cups strawberries

◻️1 cup raspberries

◻️1-2 Tbs lemon juice

◻️1 Tbs Chia seeds

◻️2 Tbs maple syrup

◻️Dash of water


Additional Topping Suggestions

◻️Fresh mint

◻️Desiccated coconut

◻️Fresh berries

◻️Chopped pistachios

◻️Baked apricots, cooked in maple syrup, sprinkled with rosemary


Method


Granola

◻️1. Preheat oven to 150˚C. Line a rimmed baking tray with parchment paper.

◻️2.Pulse 1/2 cup walnuts in a food processor until a crumbly meal is formed (~30-60) seconds. Transfer to large mixing bowl.

◻️3. Add remainder of dry ingredients to mixing bowl and stir to combine with a silicone spatula.

◻️4. Add wet ingredients, stir to combine.

◻️5. Spread mixture across baking tray. Cook for ~30-40min or until golden and fragrant.

◻️6. Allow to cool slightly before breaking up granola.

◻️7. Enjoy!


Whipped Lemon Coconut Cream

◻️1. Mix coconut cream in a medium-sized mixing bowl using electric beaters until light and fluffy (~45-60 seconds).

◻️2. Stir in remainder of ingredients. (Taste as you go, adjusting the sweetness and sourness to suit your preferences)

◻️3. Transfer to fridge until ready to use.


Berry Compote

◻️1. Over medium heat, add berries and a splash of water. Bring to a rapid simmer, reduce to low, and cover.

◻️2. Stir occasionally, until berries begin to soften.

◻️3. Stir in lemon juice, maple syrup, and chia seeds. Taste, and adjust accordingly. (This will begin to thicken as it cools)
