Pulled-Jackfruit Tortillas with Mango Salsa and Pico de Gallo

These Mexican-inspired tortillas are a great go-to recipe when you are looking for something easy to prepare. Packed with vibrant, nourishing vegetables, fruits and fresh herbs, this meal comes together in a matter of minutes. Jackfruit is a great addition, offering a rich texture, and a mild flavour that can be incorporated into to a variety of cuisines.


Serves: 4-8

Vegan Pulled Jackfruit Tortillas GMGLOBAL

INGREDIENTS


Pulled Jackfruit

  • 2 x tins jackfruit in brine, tough exterior removed, flesh shredded with a fork

  • 4 dry French shallots, diced

  • 4 cloves garlic, minced

  • 2-4 chipotle peppers in adobo sauce, thinly sliced

  • 2 Tablespoons adobo sauce (option to sub with a smokey BBQ sauce)

  • 4 Tbs maple syrup

  • 2 teaspoons (tsp) cumin

  • 1 tsp cocoa powder

  • 1/2 tsp smoked paprika

  • 1/2 tsp cayenne pepper (optional)

  • 1/2-1 tsp salt

  • 2 tsp neutral, high-smoke point oil for cooking

Mango Salsa

  • 2 Mexican mangoes, diced

  • 1/2 small red onion, diced

  • Juice of 1 large lime

  • 1/2 green jalapeño pepper, chopped

  • 1/3 cup coriander, chopped

Pico de Gallo

  • 8 tomatoes, deseeded, diced and gently pressed to remove excess water

  • 1 white onion, diced

  • 2 limes, juiced

  • 2/3 cup coriander, chopped

  • 1/2 - 1 green jalapeño pepper, diced

  • 1/2 - 1 tsp salt

Serve with:

  • Tortillas

  • Lettuce

  • Sliced radish

  • Fresh coriander

  • Lime wedges

  • Sliced avocado

INSTRUCTIONS

  1. To prepare salsas, mix ingredients in serving containers and store in the fridge until ready to use. (NOTE: preparing salsas in advance will allow the flavours to mix and the onion will also become less pronounced)

  2. Prepare all serving ingredients in advance as the recipe comes together quite quickly.

  3. In a medium-size saucepan, heat oil, then add shallots. Cook for 2-3 minutes, stirring continuously. Add garlic and cook for another 1-2 minutes.

  4. Add spices and cocoa powder, cook for 30-60 seconds until fragrant

  5. Add pulled-jackfruit and cook for 5 minutes on medium-high.

  6. Add chipotle peppers, adobo sauce and maple syrup, cook for an additional 2-3 minutes.

  7. Remove from heat, serve immediately.

  8. Enjoy!
